From the kitchen of: Vanessa Krahmer
1/2 cup butter, softened
1/2 cup shortening
1 cup packed brown sugar
1/2 cup sugar
1/2 tsp. baking soda
2 eggs
2 tsp. vanilla
2 1/2 cups all-purpose flour
8 oz. coarsely chopped semi-sweet chocolate
1 cup chopped walnuts, pecans, hazelnuts
Line 13x9x2 inch baking pan with foil; set aside. In a
large mixing blow beat butter and shortening with an electric mixer on medium to
high speed for 30 seconds. Add brown sugar, sugar, baking soda; beat until
combined. Beat in eggs and vanilla. Beat in as much of the flour as you can with
the mixer. Using a wooden spoon, stir in in any remaining flour. Stir in
chocolate and if desired nuts. Press dough evenly into the prepared pan. Bake at
375 for 22-25 min. and then cool on a wire rack for 1 hr.
After cooling, remove cookies from pan, leaving cookies in the foil lining,
place on cutting board and cut crosswise into 9x1/2 inch slices. Place slices ,
cut side down, about 1 inch apart on a un-greased cookie sheet and bake for 6-8
min. until edges are crispy.
